Mocktails (Virgin cocktails) are drinks that are made by mixing two or more non-alcoholic beverages like fruit juices, flavoured aerated water, syrups etc. The term mocktail is an abbreviation of two words-‘mock’ and ‘cocktails’. Well known examples for mock tails include Fruit Punch, Virgin Mary, Shirley Temple, Roy Rogers etc. They can be stirred, layered, build and shaken.
Points to be beared in mind while preparing mocktails
Most of the mock tails are served chilled. Hence, ensure that the glasses are chilled before the service
Serve immediately after shaking or mixing
Do not fill the glass till brim
Good quality garnishes should be used
Ensure that your bar is well equipped with the necessary ingredients and equipments required for making mock tails (Ice cubes, cocktail shakers, mixing spoons, knives etc.)
Service of mocktails
Mocktails are normally served chilled in their appropriate glassware from the right hand side of the guest. Ensure that the coaster is placed first followed by the straw holder with straws. Instead of coasters, B&B plate/saucers can be used as an under liner. In case of thick mock tails (where cream is used) tablespoons or parfait spoons have to be served according to the glassware.

It’s the non-alcoholic version of Bloody Mary
Glassware-Rolly Polly glass/Old Fashioned Glass
Method-Stirred
Garnish-Celery stick, Lemon wedge and Mint leaves
180 ml Tomato juice
2 tbsp Lemon juice
2 dashes Worcestershire sauce
2 dashes Tabasco sauce
1 pinch Salt
1 pinch Pepper
Ice cubes
Method
- Frost the rolly polly glass with a thin layer of salt
- Stir together all the ingredients in a mixing glass
- Pour the drink in the rolly polly glass
- Garnish with a celery stick or lemon wedge or with mint leaves.

Glassware-High ball glass
Method-Shaken
Garnish- Pineapple slice and Cherry
60 ml Orange juice
60 ml Mango juice
60 ml Pineapple juice
2 tsp Grenadine syrup
15 ml Fresh cream
Ice cubes
Method
- Add all the ingredients in a cocktail shaker filled with ice
- Shake well and strain it
- Serve it chilled

Glassware-High ball glass
Method-Layered
Garnish- Salted rim, Mango slice and Cherry
120 ml Mango juice
60 ml Grape juice
2 tsp Grenadine syrup
Salt for frosting
Crushed ice
Method
- Frost the glass using salt
- Add crushed ice, place a stirrer inside with the garnish
- Use the back of a spoon to float the layer
- First pour grenadine syrup, then mango juice and lastly add grape juice (acc.to the consistency)

Roy Rogers is a classic mocktail named for a singing cowboy. Other name for this drink is Cherry Coke.

Method-Build
Garnish-Maraschino cherry and lemon wedge.
275 ml Cola
5 ml Grenadine syrup
Method
- Fill the highball glass with ice cubes
- Pour cola and then add few drops of grenadine syrup
- Garnish with a maraschino cherry and a lemon wedge
- Serve chilled.

A Shirley Temple is one of the classic mocktails, often served to children. Shirley Temple is actually the name of a child actor who was famous in American film and television industry.
Glassware-Tom Collins Glass
Method-Build
Garnish-Maraschino cherry and lemon peel.
275 ml Lemon-lime soda
15 ml Ginger ale
5 ml Grenadine syrup
Method
- Fill the tom collins glass with ice cubes
- Pour lemon-lime soda and ginger ale
- Add grenadine syrup
- Garnish with a maraschino cherry and lemon peel
- Serve chilled.

Method-Build
Garnish-Mint leaves and Lemon slice
2 nos. Lemon
4 nos. Fresh Mint leaves
20 ml Lime juice
120 ml Ginger ale
15 ml Ginger mocktail
Castor sugar
Method
- Take a high ball or collins glass
- Muddle (Crush) mint leaves and castor sugar in it
- Add lime juice followed by ginger ale and ginger mocktail
- Garnish with mint and lemon slice.Serve chilled.
